綠豆湯 – Mung Bean Soup – A Summer Special

028I love eating mung bean soup in the summer.  It’s cold, slightly sweet, and a little bit grainy.  I know most people don’t really jump at the sound of a bean soup as dessert, but I love mung bean soup.

People drink this soup to lower their body’s “heat,” thus it’s an ideal soup to drink in the summer.

Recipe – Mung Bean Soup (綠豆湯)

Serves 4

Ingredients–

  • 1 cup mung beans
  • water
  • sugar, to taste

Directions–

  1. Rinse mung beans in cold water several times and inspect carefully for pebbles.
  2. Boil the mung beans in approximately 4-5 cups of water until the beans are soft and mushy.  This should take approximately 30 minutes.
  3. At this point, if they’re not mushy enough, you can let the water cool for a little bit, then bring the soup back to a boil.
  4. Add sugar to taste.  I usually start at 1/4 cup sugar and up it from there.

    Mugbean soup is BEST! I love eating it at the buffet places like CityLite!

  4. i loved this when my mom made it when i was growing up. recently i had it in milk and with some other jellies/pearl barley and it was even better!
