綠豆湯 – Mung Bean Soup – A Summer Special
I love eating mung bean soup in the summer. It’s cold, slightly sweet, and a little bit grainy. I know most people don’t really jump at the sound of a bean soup as dessert, but I love mung bean soup.
People drink this soup to lower their body’s “heat,” thus it’s an ideal soup to drink in the summer.
Recipe – Mung Bean Soup (綠豆湯)
- 1 cup mung beans
- sugar, to taste
- Rinse mung beans in cold water several times and inspect carefully for pebbles.
- Boil the mung beans in approximately 4-5 cups of water until the beans are soft and mushy. This should take approximately 30 minutes.
- At this point, if they’re not mushy enough, you can let the water cool for a little bit, then bring the soup back to a boil.
- Add sugar to taste. I usually start at 1/4 cup sugar and up it from there.
